Egg Roast

Ingredients - Serves 3-4 
                                                                 
Oil - 2 tbsps
Green Chilly - 4 nos
Curry Leaves - few
Onion - 1 big 200gms
Salt
Tomoto - 2 nos - 300 gms
Red Chilly powder - 2 tsp
Corriander powder - 1 tsp
Garam masala - 1/2 tsp
Boiled Eggs - 4-6 nos

  1. Heat Oil in a skillet.
  2. Add the green chillies and curry leaves
  3. After a minute, add the chopped Onions and Salt. Adding salt now will help to saute the onions faster.
  4. Reduce the heat to medium and keep stirring between few minutes.
  5. Once the Onions are almost translucent, add in the Tomatoes.
  6. Close with a lid and let it cook. Keep stirring in an interval of 3-4 mins.
  7. Once it has reached the consistency you want, add in the Chilly powder, Corriander powder and Garam masala.
  8. Roast it for few mins.
  9. Once its done, add in the boiled eggs and mix in well with the Masala

This goes well with Chapathi/ Roti and rice.

Sausage and Egg Wrap




















This is an easy and quick fix for breakfast if you like Sausage and Eggs. You just need a Tortilla or a Chapati and 5 mins and voila you have a healthy and filling breakfast.

Ingredients Serves 1
Sausage - 75 gms
Egg - 1
Oil - 1/2 tsp
Onion - 1 tbsp chopped
Salt
Pepper
Tortilla / Chapati - 1 cooked
Cheese - Optional

Heat the oil in a Skillet and saute the onions.
Now add the sausage and crumble them. Let it cook for 5 mins or till its cooked well.

Meanwhile beat the egg well and keep aside
Heat the tortilla/ chapati and keep aside

Once the sausage brown well, add the beaten egg in medium heat and mix it with the sausage.
Add salt and pepper.
Take it off the heat once the egg is cooked

Below is how i make the wrap which might not be the correct way but it helps to get the work done :-)
Spread Aluminium foil in a plate and place the tortilla in the middle

Marble Cake

Yup, its time for a cake and i made a marble Cake. This is the first cake that i am making. I really love the Marble look of this cake. Even though we have had this earlier, we never thought of making it.
So i got this recipe from another cooking Blog. Its called "Cooking With Alia". I have used the exact recipe while making this

Ingredients Serves 6
Eggs - 5
Sugar - 125 gms
Salt - a pinch
Vanilla Extract - 1 tsp
Baking pdr - 1 tsp
Unsalted Butter - 1 stick (8 tbsp)
Flour - 128 gms
Milk Chocolate - 125 gms
White chocolate - 125 gms (Optional)

Whisk in the eggs and sugar till you get a thick mixture which is pale in color, allmost white
It took me 30 mins for that with a speed of 3-4 in my electric mixer Uffff.
Now add the salt, Vanilla Extract and Baking pdr and whisk it well.
Now melt the butter and add it into this mixture. Mix in well
Now sift the flour into this mixture and mix it.
Now divide this into 2 portions and keep aside
Melt the chocolate in individual pans.
Mix in the milk chocolate into one portion of the batter and White chocolate into the other portion.

Take a pan and grease it with butter. layer the parchment paper and press it well.
Now add half of the White chocolate batter and spread it evenly.
Add all of the Chocolate batter and spread it evenly
Now add the remaining white chocolate batter and spread it evely

Take a butter knife and make swirls in the cake batter to get the marble effect

Now Bake it in 360 degree F for 45 mins
A toothpick or knife inserted should come out clean to ensure its done

Notes

  • While mixing the flour to the batter, mix it slowly with a rubber spatula. That way the cake will remain moist and fluffy while baked. Do not overmix.
  • White Chocolate is optional, if not added it will have a Vanilla Flavor
  • Start checking from 35 mins onwards so that you dont burn it out
  • This batter was enough for a 8 * 8 baking pan
  • Let the melted butter and chocolates cool down a bit before mixing into the batter

Scrambled Egg with Pepper

Yes, i know that most of them will be knowing how to make this.But still if there is anyone around who doesn't know how to make scrambled eggs, then this is for them :-)
You can make different varieties of scrambled eggs by altering the ingredients. In this one i have added pepper. It solely depends on your likes and dislikes.
This also makes an excellent breakfast dish.

Ingredients (Serves 1)
Eggs - 2
Onion - 1/4th on a medium one (minced)
Green Chilly -2 nos
Salt
Pepper - a pinch
Curry leaves - 2-3
Oil - 1/2 tbspn

Heat oil in a pan, and add the onion, green chilly and curry leaves.
Meanwhile whisk the eggs with salt and keep aside
Once the onions are done well, add the whisked eggs and sprinkle the pepper powder and mix it well.
Do the mixing part in low heat, so the egg gets scrambled very well
Serve hot with Rice or Roti

Bread Omelette is a common breakfast item in most of the household, still i would like to go with this recipe for those who are new to cooking but dont know much about it (see i never forget my past :-) )
When i was completely new to cooking, there were very minimum things i knew to make and it always left me cooking the same thing again and again. Sounds boring ryt? I know
Then slowly i started to think more and frequent calls to my in laws, my parents, friends and the Cooking Blogs; i am happy to say now i try not to make the same recipe again for quite some time

The bread inside the omelette is so inviting with its soft texture

So now to the recipe

Serves 1
Ingredients
Eggs - 2
Bread slices - 2 small or 1 large
Green chilly minced - 1
Pearl Onion minced - 2
Salt
Pepper pdr - a pinch
Oil - 1/4 tsp

Whisk the eggs with the pearl Onion, green chilly and salt and keep aside
(Its good to have a large pan, so you will get a big  omelette to cover the bread completely)
Heat a non stick pan with the oil and add the whisked eggs mixture and spread it to the maximum. Keep the heat in medium.
Now sprinkle the pepper powder.
Once its half cooked, add the bread slices and carefully fold the omelette and flip it and cook it for 1-2 minute in low flame
Check for the omelette and transfer to a serving plate

Is there a way not to eat eggs?
Nah... I dont think so
I remember my father making this when i was a kid and i loved them. Its just so different than  the other egg recipes you have
Because of the tanginess, spiciness its just like getting mouth full of flavours in just one bite
And its really fast so there is nothing stopping you from making it
The mixture that we add the eggs to is actually really tasty that you can eat that itself and adding the eggs just increases the taste level.

Ingredients (Serves 2)
Eggs - 2
Onion - 1/2
Tomato - 1/2
Chilly Pdr - 1/2-3/4 tsp based on your tolerance level
Salt
Oil - 1 tbsp

Whisk the eggs and keep aside
Heat oil in a pan and saute the onions well. Once its done, add the tomatoes and saute till the get mashed very easily. At this point add the salt and chilly pdr and saute till the raw smell vanishes. Do a taste test and you should have the salt and chilly pdr a bit on the higher end as we are yet to add the eggs
Lower the heat and add the eggs and mix it well with the onion tomato mixture so that we don't get egg alone anywhere.
Once its mixed well, increase the heat to medium-high and continue scrambling them till its done

Serve with Roti or Rice
