Masala Oats

Masala Quaker Oats
Oats is all around today because of its nutrient level. I got bored of eating Oats with Milk pretty soon and thats when i thought why not add some spices and turn it into Indian flavors.
The whole thing takes 5-6 min of your time, not a bad deal for something so healthy and under 200-250 Calories

Ingredients Serves1
Oil - 1 tsp
Mustard - 1 tsp
Mixed Vegetables - a handful or more
Salt
Spice Mix - 1 tsp or more
Oats - 1/2 cup
Water - 1 cup

Heat Oil in a skillet and splutter the mustard
Now add the Vegetables and saute them
Add salt, the Spice Mix and mix well.
Now add the Oats and mix it into the spice mix well
Now add the water and close the pan with a lid
Let the oats gets cooked and it gets your required consistency

I used a Spice Mix for Meat, you can use Garam Masala or any other Spice Mix which is your favorite
Try changing the Spice Mix and Vegetables for a difference
I used 1 minute Quaker Oats, so the time may vary for different type of Oats

Easy Veg Fried Rice

Vegetable Fried Rice
I love to call this Easy Fried rice. Usually its very simple and easy to make Fried Rice.
This simplicity and my love to Indo-Chinese, forces me to make this more often. You can cook fresh rice or use the left over rice while making this. Both goes very well.
I use Rice cooker to cook the rice while making Fried Rice as it gives me the correct texture

Ingredients(Serves 2)
Basmati Rice - 1 cup (uncooked)
Water  - 1.5 cups (to cook Rice)
Mixed Vegetables chopped - 240 gms (its best to chop it in very small pieces)
I used Green Beans, Green and Red Bell Pepper and Carrot
Soy Sauce - 1 tbsp
Salt
Green Onion - 4-5 stalks
Oil - 2 tbsp

Cook the Rice along with the water and salt and once its cooked, remove it and spread it into a big flat plate (I use my Baking sheet) and keep it in your fridge till its ready to be added  into your vegetables (Min 20-25 mins).

Heat oil in a pan and add the vegetables and the White part of the Green Onion and saute it for 2-3 mins in High Heat.
Now add the soy sauce and saute it for 1 min. Reduce the heat to medium- low
Now add the Rice and mix it slowly into the veg mixture. Take care not to break the Rice.
Heat it till the rice gets heated through. Garnish with Green Onion and serve

It tastes good with various types of Manchurian

Atta - few tbsps  for dusting while rolling them out

Poori
Now take them and roll them into balls.
Now take one dough ball, flat them a little with your hands .
Sprinkle with atta and slowly roll them out.

PooriThis is how they look after rolling out
Mine are not perfect rounds :-)

After you roll out all of them
Heat oil in a deep bottomed pan and fry them one by one
While frying, gently press the top of the poori with your spatula which will help them to puff.
Now flip it over and let it cook the other side.
Once its done, drain the excess oil in a kitchen towel.

Ash Gourd / Kumbalanga Olan

Ash Gourd Olan

Olan is a common dish in Sadya's in Kerala. There are different varieties and this one is made of Ash Gourd / Kumbalanga alone. Its a very simple curry to make and will take maybe 15 mins of your time.
The only trick in this is the way you cut the Vegetable. It should be very thin and due to this it gets cooked in 5-6 mins max.
It is not very spicy, so its best to have with rice and something spicy like Pickles or a spicy Upperi :-)

Ingredients (Serves 3)
Ash Gourd - 400 gms
Green Chilly - 2 nos
Water - 1/2 cup
Salt
Coconut milk - 1/2 cup
Curry leaves - few
Oil - 1 tspn

Chop ashguord in very thin slices
Cook the ashgourd pieces in water with the salt and green chilly. It took me 5 mins for it to get cooked.
Now increase the heat and let the water dry.
Switch off the heat and add the coconut milk and do a taste test
Add the curry leaves and drizzle the oil.

Serve over hot rice :-)

Cilantro Chutney / Dip

Coriander Chutney

This post links to the memories about my school days especially the Lunch Time. Most of us use to bring Rice and some sort of curry for Lunch whereas our friend Anu will everyday bring something different. She will bring sandwich, cutlets, various types of rice. Every time she brings this sandwich with Cilantro chutney and a slice of cheese, one share goes to my friend Jinny and myself. Jinny was more interested in the cheese whereas i was more interested in the Cilantro chutney part :-)
Coriander DipMy love towards her mother's foods were so serious that i even thought of marrying her brother. As her brother was younger to me, i was ready to marry her cousin (whom i have never seen) who was of course elder ;-)
Its better to be family to get all those goodies from her mother. That was my intention :-D
She used to pull my leg telling that she will talk to her aunt for me. Oh God it was just so funny when i think about it today.
Today about 9-10 years later, she might have forgotten about it but whenever i see Cilantro, Anu and her sandwiches comes to my mind. Jinny has been asking me to put this recipe for quite some time.
So i would like to dedicate this post to my friends Jinny, Anu and all those memories.
I don't know what all Anu's mother use to add, this is just what i came up with and it tastes the same.
Bread Cilantro Chutney

Ingredients (Serves 2)
Cilantro - 1/2 cup
Coconut grated - 2 tbsp
Green chilly - 1 small
Salt
Water - 2 tbsp

Grind all the ingredients together. You can add more water, if you like it more thinner.
You can add any spices that you like the flavour of. This is just the basic version.

Use it as a spread for your bread or you can use it as a dip also.

Happy Eating!!!

Spicy Potato Upperi - As simple as it can get

Potato Upperi

Potato Upperi is  a frequent one for us because we both love it. The potatoes that you get here in US are really very soft. They cook very fast and its really very smooth considering its Potato.
In Kerala, i found Ooty Potato which was really very good one. It was a little pricey compared to the regular ones but they were very good as they were so soft.o can get Ooty Potato, better give it a try.

Ingredients (Serves 2)

Potato - 2 medium ones chopped
Oil - 1 tsp
Mustard - 1/2 tsp
Curry Leaves - few
Salt
Chilly Powder - 1/4 tsp (depending on your taste level)

Heat oil in a pan and splutter the mustard and add curry leaves.
Now add the potato along with salt and keep it in medium heat for 5 mins. Close the pan with a lid.
Dont toss them so that they get a nice crispy crust on one layer.
The potatoes will be done allmost now. Sprinkle the chilly pdr and toss them and keep it in low heat for 1 min more and its done.

Happy Eating!!!

Ulli Chammanthi

Onion Chutney Dosa
Ulli Chammanthi

Haaa.... This is the one dish that i don't remember how many times I have cooked.
This is one thing that goes very well with Dosa and Idli. Whenever i make Dosa, this is a regular. It takes some time because you need to saute the onions but still i manage to make it because of the taste it has. It takes only 15 mins but dosa is something that i make when i am Lazyy so 15 mins is a lot for me :-)
Usually 'Chammanthi' will be blended till paste but this one i just give 2-3 pulses because thats how it tastes good. I feel it increases the taste level when you get to bite the onion along with the 'chammanthi'

Ingredients (Serves 2)
Pearl Onion - 15-20 nos
Salt
Chilly Pdr - 1/2 tsp (adjust to your heat level)
Oil - 1-2 tbsp

Heat oil in a pan and saute the onions with salt in medium heat for 8-10 mins.
Add the chilly powder and saute for 4-5 mins more and let it cool for 5 mins.
Now add it into the grinding jar and give 2-3 pulses the max (for the consistency as seen in the photo).
Transfer to a serving bowl
Now pour 1 tsp oil on top of the chammanthi and mix well.

Note: If you like it as a paste, then go ahead and grind it. It will be done in seconds :-)

Have it with Masala Dosa or Spot Dosa

Enjoy dipping!!!

Strawberry Banana Smoothie

Strawberry Banana Shake
Strawberry Banana Smoothie

I miss the shakes that we get in India. Here i cant find a place where i will get Saudi or Sharjah shake :-( . Its really sad. They are so tasty
So i tried to create my own version for them. Here I have tried a Strawberry Banana Smoothie and must say it came out good. Try this and let me know if you guys found it good or not? Believe me, You wont regret it.

Ingredients
Milk -1.5 cups
Sugar - 3 tsp
Strawberry - 4-5 medium sized ones
Banana - 1/2 of a normal one (take out the seed part)

As the shakes are made of Milk that is allmost frozen,  i tried to recreate it this way.

Mix Milk and sugar and pour them into Ice Tray and freeze them for 8-10 hours
Blend the strawberry along with the banana pieces and the Frozen milk to get a good thick Smoothie.

Enjoy!!!
