Rice Kheer / Payasam

Rice Payasam
When we went for a Lunch Buffet, i got this payasam there and it became our favorite at that instant itself.
From that day onward i have been searching for its recipe and got it from Padhus Kitchen.
I have made this twice till now and am sure that the number is going to increase a lot.
I have not made any changes to the recipe but still will add how i made it.

Ingredients - Serves 4
Whole Milk - 4 cups
Basmati Rice - 2 tbsp (Yes that is enough)
Sugar - to your taste level
Ghee - 2 tsp
Cardamom - few pods (to your taste level)

Heat 1 tsp ghee in a skillet and roast the Basmati rice and fry for 1-2 mins
Now give a quick pulse to this rice in a grinder just enough to break them
Take care not to break it a lot
Smear the remaining ghee on the bottom and sides of a pressure cooker and add the rice, milk and cardamom seeds.
Drop a steel spoon into this to avoid the milk getting burned.
Heat this in very low heat (in a range of 1-10 heat level, i kept it in 2) for 35-40 mins.
If the rice is not cooked through or if you want it be more thick, heat it for some more time
Add the required amount of sugar and heat it for 5 mins more and take it off heat.
Serve it hot or Cold

You can substitute the rice to Rose Matta, but when i tried, it took me 1.5 hrs to get the rice cooked, so i felt its not worth it.

I love it when its cold

Curd Rice

We were in Mumbai when i was a kid. It was a 2 day journey in train to Kerala and my mother used to make Curd Rice and Lemon Rice for us. They remain fresh for a long time and that was what made them very special always. But i must say i never liked them back then. Looking back now i know the reason why i didnt like them. I missed those delicious foods that they sell in trains because of the curd rice and lemon rice. Ufff...
12 years later, i met Curd Rice when i got a job and moved to Bangalore. Slowly i realized that they were really good.
And now they are fast to cook, and they are my Favourite.
From Hatred to Favourite took almost 15 years for me :-)

Ingredients (Serves 2)
Uncooked Rice - 1.5 cups (I used Sona Masoori)
Curd - 1 1/4 cup (it shouldn't be too sour)
Grated Carrot - 3-4 tbspn
Green Chilly chopped finely - 3-4 medium ones
Ginger chopped finely - a small piece
Salt

Seasoning
Oil - 1 tbsp
Urad Dal - 1 tsp
Mustard - 1 tsp
Curry Leaves - few
Dry Red Chilly - 4 nos

Cook the rice with 3 cups of water and keep aside. Let it cool (You can use leftover rice also)
Mix the curd, grated carrot,green chilly,ginger and salt and let it sit for 5-10 mins.
Now mix in the rice along with the curd mixture and mix it well. Mash little rice when mixing them and keep aside (I blended little rice along with the curd mixture to get the mashed consistency)
Heat oil in a pan and splutter the mustard. Add the urad dal, curry leaves and dry red chillies and fry till the urad dal is little brown in color. Mix in the seasoning along with the Rice and Curd mixture. Let it stay for 10 mins and serve.

I usually serve it with something that is spicy like Spicy Potato and Pickle

I love Fried Rice. Its easy and tasty and simple to cook. There is nothing that is mandatory and you can almost use anything that is available at your home. Just make those sauces available
Even though i am a fan of Indo-Chinese Food, Raj doesn't seem to like it a lot. So it needs a bit of persuasion to get Chinese food.
Today i had some brown rice left from our Chinese Take Out yesterday and i needed something fast with minimal work for my lunch. I just tossed that rice along with some vegetables and eggs and Sauce and there lies my Fried Rice
Veg Fried Rice

Ingredients (Serves 2)
Cooked Brown Rice - 2 cups
Mixed Veggies - 3/4 cup
Eggs - 2
Chilli Sauce - 1 tsp
Tomato Sauce - 2 tsp
Soya Sauce - 1 tsp
Oil - 1 tsp
Salt

Heat Oil in a Pan, and stir in the vegetables in medium- high heat for about 2- 3 mins.
Add little salt and mix and keep the veggies to a side of the pan and scramble the egg in the rest side of the pan. Once its scrambled well enough, mix it along with the veggies and turn the heat to low. Add the sauces and mix it well.
Now add the rice and mix well. Do a test taste for salt and let it stand in medium heat for some time and mix it Over.
Hummm i guess, oh yeah its ready!!!

Easy Tomato Rice
Tomato Rice

This is something that i cook when i just want to have something fast to eat which happens often. Its so easy and simple that we can prepare in 5 mins
This is not the authentic version but just something that i find easy and delicious.

Ingredients (Serves 1 generously)
Rice - 1 cups (I used Sona Masoori)
Water - 1 cups
Tomato - 1 large
Pearl Onion - 3
Chilly Powder - 3/4 tsp
Mustard seed - 1 tsp
Cumin Seeds - 1/4 tsp
Curry Leaves - few
Salt
Oil - 1 tsp

Cook the rice with the water and keep aside. You can also use leftover rice for this
Puree the tomato well in a blender and keep aside
Chop the pearl onion and keep aside
Heat oil in a pan and splutter fennel seeds and mustard seeds one after another. Once it splutters add curry leaves
Add the chopped onions and salt and saute it well
Add the tomato puree and saute for 1-2 mins then add the chilly powder and saute for 1 min
Once the raw smell goes, add the rice and mix it well with the mixture.
Leave in low flame for 2-3 mins
